Moments that Matter Most

Oh my :) This is such a good video. I felt very uplifted after watching it and listening to it. How is it that the simplest things are often the most profound?

Choose your Career

Wow, how eye opening life can be sometimes. I am currently working on a project that involves web design, and while looking at the web page I came across some resources about careers.

Can I just say, wow! I wish that I had read this article in High School :) You can't change the past but really I wish I would have actually contemplated the possibility of having a career when I was younger...
As someone said recently "Ignorance is not bliss"

Anyway, I will include a link to the article. The article I am referring to is on page 4.

One thing I can say for sure, is that my kids will have a chance to discover what they love and I will encourage them to follow their dreams. As for now, I am going to try to pinpoint where I really want to be. I have a good job but in a way my whole career thus far has "come" to me. It has just worked out.

Right now all I want to do is go tell every teenage girl "Discover what it is that you love and go for it! If you find love and get married on the way, then Hooray! If not, then at least you will be leading the life you have dreamed of."

Time for Change

I think that it is time to make some changes to my blog. I don't really know what I am doing at this point, but part of the reason I am even posting this is because I am tired of my last posts video covering the current books I am reading...I don't want to leave Georgia!!

Spiritual Food

Do you ever feel hungry for spiritual things? I do

My cousin posted this video on Facebook a few months ago. I cannot tell you how much this little clip from F. Enzio Busche helps me. He says some pretty simple but profound things.

Also, if you want to read a really good and inspiring book. There is a book called "Yearning for the Living God". It is a biography about F. Enzio Busche.

Kohlrabi

Another thing that Health Utah sent me, is a list of plants that you can still plant this month. Here is the list...

It’s not too late to plant basil, beans, beets, carrots, cucumbers, eggplant, kale, kohlrabi, melons, peppers, pumpkins, squash, tomatoes, and turnips.

There are a few of those items that I would like to plant. The one I want to plant the most is kale so that I can make kale chips. (Also, I think kale would be hard to kill)

But, I was curious about what kohlrabi is. I read on the link in this post that it is often used in Indian Cuisine :) yummy
Here is a picture of it...

And here is a link to some recipes :) I am looking forward to having time to cook and to try some new recipes soon.

btw if you click on the recipe link you will see where I got the pictures for this post...

Food Challenge Week 1

Success! I did not eat meat yesterday :) So, that means I have accomplished my goal of "Meatless Monday" for one week. Only 3 more to go this month.
I didn't eat as healthy as I would have liked yesterday. But, as the quote says "If you fail to plan, you plan to fail". I probably should go to the grocery store soon...

Anyway, here are a few more fun things that Healthy Utah sent to me today.

Want a Reusable Bag for Your Local Produce?
Healthy Utah will give away reusable bags to the first 50 people to visit us at the Salt Lake City Downtown Farmers Market on June 18th from 8:00 - 10:00 AM next to Borski's Farmers booth (street side, 300 South, across from Uffen's market place) at the downtown SLC farmers market. Or, if you attend your own local farmers market, CSA, or Co-Op, take a picture of yourself there and email it to us ( healthyutah@utah.gov ) and we'll mail you a reusable bag!

What's in season in Utah in June?
Basil, Blueberries, Chives, Cherries, Dill, Fennel, Garlic, Lettuce, Mint, New Potatoes, Parsley, Peas, Radishes, Scallions/green onions, Spinach, Snap peas/snow peas/pea pods, Strawberries.

Yum, maybe I need to go to the Farmer's Market :)

Also, here is something that would be fun to do :)

Plant perennial herbs near the house so you’ll be sure to use them. Mediterranean herbs,
including rosemary, oregano and thyme don’t need good soil or much water and do
well in planters.

:) This way I could make yummy breads or pizza dough with rosemary as well as test my skills in keeping plants alive :/ I love rosemary!

New Coldplay Single

I honestly have not listened to Coldplay much lately, but tomorrow they are releasing a new single. It will be available at 12 pm. :) I hope it will be good. I usually am not disappointed.

Sneak preview of the lyrics :)

I TURN THE MUSIC UP, I GOT MY RECORDS ON
I SHUT THE WORLD OUTSIDE UNTIL THE LIGHTS COME ON
MAYBE THE STREETS ALIGHT, MAYBE THE TREES ARE GONE
I FEEL MY HEART START BEATING TO MY FAVOURITE SONG

AND ALL THE KIDS THEY DANCE, ALL THE KIDS ALL NIGHT
UNTIL MONDAY MORNING FEELS ANOTHER LIFE
I TURN THE MUSIC UP
I'M ON A ROLL THIS TIME
AND HEAVEN IS IN SIGHT

I TURN THE MUSIC UP, I GOT MY RECORDS ON
FROM UNDERNEATH THE RUBBLE SING A REBEL SONG
DON'T WANT TO SEE ANOTHER GENERATION DROP
I'D RATHER BE A COMMA THAN A FULL STOP

MAYBE I'M IN THE BLACK, MAYBE I'M ON MY KNEES
MAYBE I'M IN THE GAP BETWEEN THE TWO TRAPEZES
BUT MY HEART IS BEATING AND MY PULSES START
CATHEDRALS IN MY HEART

AND WE SAW OH THIS LIGHT I SWEAR YOU, EMERGE BLINKING INTO
TO TELL ME IT'S ALRIGHT
AS WE SOAR WALLS, EVERY SIREN IS A SYMPHONY
AND EVERY TEAR'S A WATERFALL
IS A WATERFALL
OH
IS A WATERFALL
OH OH OH
IS A IS A WATERFALL
EVERY TEAR
IS A WATERFALL
OH OH OH

SO YOU CAN HURT, HURT ME BAD
BUT STILL I'LL RAISE THE FLAG

OH
IT WAS A WA WA WA WA WA-ATERFALL
A WA WA WA WA WA-ATERFALL

EVERY TEAR
EVERY TEAR
EVERY TEARDROP IS A WATERFALL

EVERY TEAR
EVERY TEAR
EVERY TEARDROP IS A WATERFALL

Meatless Monday

Every month at work, I get emails inviting me to sign up for a "Health Challenge". Most of the time I don't do it, because I feel to busy. But, this month's challenge sounds pretty easy and fun.

The health challenge for June is to focus on healthy eating. I received an email with lot's of web sites for locally grown produce. As part of this challenge I get to set my own goals. An example of a goal that they gave us, is to go the local Farmer's Market :) FUN!

The part that I am for sure going to try to do and you can as well, is Meatless Mondays. The goal is to go at least two Monday's in the month of June without eating any meat. I didn't know this prior to yesterday, but there is a global movement called Meatless Mondays. (which as a side note, it seems that there is a global movement for just about everything! how can I keep up? sigh...)
Anyway, I checked out the site yesterday and it was interesting. Meatless Monday is a global movement to help in the fight against obesity. I looked at some of the numbers, which were frightening but not really surprising. A link to NPR on the site states, based on current rates by the year 2030, 50% of Americans will be obese.

Does anyone else feel like the movie WALL-E could become reality?? Yikes

Also, just as an FYI...There was another E. Coli outbreak, this time in Europe. Here is a link to the news on the outbreak in Germany. This news made me curious about E. Coli and why in the world it is so out of control. Here is another link, it might gross you out.

But, if you have seen the documentary Food Inc., you may already know of the awful condition of slaughter houses and so you may not be as grossed out.

I am committing to do Meatless Monday for the entire month of June :) Join me if you want...Mare, prepare for Meatless Monday when I am there. Andrew will be a big fan, I am sure ;)
